Things to Love in Fall (Part 2).... Football!

I don’t know how many football fans I have out there, but in the Grigg family, Fall is prime time for cheering on our favorite team…. the South Carolina Gamecocks! We spend a great deal of time hanging out with friends at our little Cockaboose at Williams-Brice Stadium in Columbia, SC. For those of you who have never heard of a Cockaboose, these little tailgating treasures are actually a string of old railroad cars located right beside the stadium. Their interiors have all been refurbished, and although tiny in scale, they provide plenty of room for hosting perpetual gaming festivities! Here are a couple of photos of what they look like (the stadium would be directly behind you if you were standing in front of them in person)…. Once I can locate them, I will add some photos of our specific Cockaboose and its interior design! You will see that small spaces can still be fabulous and luxurious! At Knotting Hill Interiors, we have plenty of football paraphernalia for the fan in everyone! A variety of items from all different teams… USC being the best, of course! Totes and coolers are essential tailgating items! Fabulous serving platters make every dish look even better! These handy baskets (bottom shelf) are amazing for hauling around all of the tailgating necessities, and they are also perfect for everyday trips to and from your car! Yes, we even carry items for our rival teams! Any UNC fans out there? More UNC essentials! Great “man gifts”! Here is another of those handy baskets, perfect for any Tarheel enthusiast! Do you cheer for the Wolfpack? We have you covered with game day merchandise! And on the “bottom” of the pack, ahem, is our greatest rival… that orange team. Yes, we could not be biased, so we even carry Clemson merchandise.... although it pains me to do so! Ewwwww! And for your game day dining, here are a couple of tailgating dip recipes (vegetarian, of course!) from Martha Stewart…. WHITE BEAN DIP Ingredients

Serves 6

  • 2 cans (15.5 ounces each) cannellini beans, rinsed and drained
  • 3 tablespoons extra-virgin olive oil, plus more for drizzling
  • 1 to 2 tablespoons red-wine vinegar
  • 1/4 cup water
  • 2 teaspoons finely chopped fresh rosemary
  • Coarse salt and ground pepper

Directions 1. In a food processor, combine beans, olive oil, vinegar, and water. Process until smooth, adding more water if necessary. Add rosemary and pulse until combined. Season with salt and pepper. Transfer to a serving bowl and drizzle with a little oil.

BLEU-CHEESE DIP Ingredients * 1/2 cup sour cream * 1 tablespoon mayonnaise * 1/2 teaspoon hot sauce, such as Tabasco * 1/4 teaspoon coarse salt * 1/3 cup crumbled blue cheese

Directions 1. In a small bowl, stir together sour cream, mayonnaise, hot sauce, and salt. Stir in blue cheese. Chill, covered, until ready to serve.
